Spicy Bacon Lentil Soup

It’s been a while since I have posted a recipe.  It’s not because I am lazy or that I have been burned out.  It’s just that when I have a ton of things that need to be done, unfortunately, my website takes a back seat.  My day job and chores around our home come first.  Feral Kitchen unfortunately finishes second.  And quite frankly, I don’t like it one bit…

Well, I’m happy to be back and the recipe that I want to share today is a simple Spicy Bacon Lentil Soup that I prepared for a few of my lunches during the work week.  I packed a bowl and a half sandwich today in my lunch box, and put the other 3 servings in the freezer for lunch at a later date.  My Spicy Bacon Lentil Soup is made with lentils, bacon, onion, carrots, celery, garlic and a healthy hit of cayenne pepper.  It’s simple, flavorful and delicious.  Enjoy!  Tessa

Ingredients:

  • 2 – 15 ounce cans lentils
  • 2 strips of bacon
  • 1 cup chopped onion
  • 2 celery stalks (chopped)
  • 2 carrots (chopped)
  • 1 tsp minced garlic
  • 1 quart chicken stock
  • 1 bay leaf
  • 1/2 tsp cayenne pepper (or to taste)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • salt and black pepper to taste
  • garnish with fresh green onion

Begin by rinsing and draining the lentils.  Set aside.  Chop the bacon and add to a large sauce pan.  Over medium heat crisp the bacon and drain.  Add onion and cook until opaque.  Add lentils, celery, carrots, garlic, chicken stock, cayenne pepper, bay leaf, cumin and coriander.  Cook until the carrots and celery until they are tender.  Add salt and black pepper to taste.  Remove bay leaf before serving.  Makes 4 servings.

    This sounds very simple to make. I love that it only has 2 strips of bacon which seems just right and keeps it on the healthy side still. Great recipe Tessa. I’m bookmarking this one.

      Hey Suzanne! The soup originally was going to be Northern Bean but I had only one can in the cupboard. My thoughts were redirected when I saw that I had two cans of the lentils. This is the first time I have used canned lentils. I’m going to be sure to stock more…

    Hi Tessa, I’m with you on the fact that day jobs (though mine involves cooking and taking photos), family and house chores take precedent over blogging… And even though I cook and shoot lots for clients I can’t share the recipes on the blog most of the time. Anyway, what I really wanted to say when I saw the title of this post is that I wanted to jump straight in and have a bowl of your soup straight away. Lucky you have so many leftovers in the freezer! Yum!

      Hey Mad Dog! You are going to laugh! That is a cheap fake wood place mat that I found at a bargain store. It’s actually two… duct taped together on the back to make it look like I have this really cool table. I fold it up and put it away when I am not photographing. My real table that I photograph on is clear glass. Too distracting for food photography.

    Oh Bacon, bacon, bacon, bacon, bacon!!!! Maybe that’s what I need to get me to eat lentils. :) Never did like lentils, but the two words “spicy” and “bacon” make me want to give them another try. Looking at your seasoning, this could also be called a “southwestern lentil soup” and you know how much I love southwestern flavors. Definitely need to try this one! Thanks and welcome back!

      Bacon can make anything taste good. That’s the only way that I will eat brussel sprouts :). And, you’re right, it is a Southwestern type of soup. I guess it was instinctive. I love that type of flavor!
